Greek Salad

I have a confession to make. My culinary skills have taken quite a hit this last week. We’re all battling some sort of plague here in the house of Fiddle, and the only thing that remotely sounds good to me is Cream of Wheat.
With butter. Lots and lots of butter. Oh. And sugar. Lots and lots of sugar.
And since I haven’t been able to get to the gym this week, you can imagine the bloated image I have of myself.
It isn’t pretty.
I could share with you my recipe for Cream of Wheat.
Throw some dry Cream of Wheat in a microwave bowl, add water, microwave until it explodes in the oven, remove, clean out the microwave. Or not.
But, I won’t do that to you.
Salads appeal to me right now also. So, I’ll share one of my favorites. A recipe for “Greek Salad.” And I’m not even Greek. I do like Baklava, though. This recipe is impressive enough for company, as well.
Not that anyone in their right mind would want to join us for dinner in our weakened state.
Greek Salad
3 Medium Tomatoes, chopped
1 Medium Cucumber, chopped
8 oz. Feta Cheese, Crumbled
1/2 Red Onion, chopped
3 T. Olive Oil
Juice from 1/2 Lemon
Ground Black Pepper
A Pinch of Dried Oregano
Couple of Sprigs of Basil
Combine the tomatoes, cucumber, feta cheese, and red onion in a medium bowl. Mix, then drizzle with the olive oil and lemon juice. Grind the black pepper over the top of the salad, sprinkle with a touch of oregano, and garnish with basil sprigs. Adjust seasonings to taste.

I love love love feta cheese! Greek salads are wonderful. You have me wanting to eat feta cheese before 7am. Something not right with at. Especially since I’m waiting on the coffee to brew as we speak.

Don’t worry about feeling bloated. We all get that way!
I’m posting my recipe I always use for potlucks because I never know what else to bring. If anyone else has any good potluck recipes, I’d love to hear them! But this one tends to disappear pretty fast.

Yay – a real Greek salad! We lived in Greece for several years, and get annoyed by “greek” salads that are basically a green salad with a viniagrette and some feta. But yours is much more authentic! Yummy stuff!
In the spirit of things, I think I may share my recipe for pastitzio – kind of a Greek lasagna…yum!
