Marshmallow Crispy Treats

saturdaystirrings.jpgOn Tuesday, we were at the park, and a friend of Cailey’s came up to me carrying a box. Of all the moms present, she made a beeline straight to me. As if she sensed I was an easy target. Because inside the box that she carried, were Girl Scout Cookies. My first inclination was to turn and run in the opposite direction.

But that would have been immature.

Curious, I leaned over and peered inside. There were 6 boxes of cookies. I scanned the labels quickly. One box of Thin Mints. I drew in a breath, and from the darkest recesses of my intestines, I let out a low guttural sound which grew into a full fledged, “nnnnnnNNNNNNNOOOOOO!”

I may have startled her.

So I stifled my knee jerk reaction of “GET BEHIND ME SATAN!”

Because she was only 6. And it was a playground. And my children prefer the more toned down version of mommy when we’re at the playground.

She was a tough little cookie sales gal. She gave it her best shot, but I was steadfast. “No thank you.” As I wiped drool from my chin.

The only reason I was able to remain strong was because I had a pan of “Marshmallow Crispy Treats” waiting at home.

I knew I had failed my children miserably as a mother, because up until then, I had never made Rice Crispy Treats. But, I got this recipe from Jessica Seinfeld’s book, Deceptive Delicious. So, I knew that there were at least some healthy aspects to it.

However, one probably shouldn’t eat 7 of them in one sitting, as a congratulatory reward for not buying a box of Thin Mints.

Marshmallow Crispy Treats

•Nonstick Cooking Spray
•1 Tablespoon trans-fat-free soft tub margarine spread
•1 (10 oz.) package marshmallows
•6 Cups Crispy Brown Rice Cereal *
•1/4 Cup flaxseed meal (I found this at Wal Mart)

 

* I have only been able to find brown rice cereal at the health food store. (Snap, Crackle, and Pop would never know the difference.)

•Coat an 8×8 inch baking pan with cooking spray.

•Melt the margarine in a large pot over low heat. Add the marshmallows and stir until completely melted. Remove the pan from the heat.

•Add the rice cereal and flaxseed, and stir like mad until the rice is well coated with marshmallow goodness. Press the mixture into the baking dish and let cool before cutting into squares.

As if.

I wish however, that someone would come up with sugar-free marshmallows. But then, it might be difficult to convince consumers to pay $1.49 for a bag of air.

    Sugar on the brain? That makes two of us! We both did a dessert for our entry.

    Sorry, I’m in a weird mood! Good thing you have a sense of humor! Maybe it’s all the sugar today…or rather yesterday since it’s after midnight. Maybe it’s sleep deprivation. Maybe it’s my brain shutting down. Need sleep…need more sugar…

    I love Jessica’s book – I have yet to buy it because I’m cheap and because I wanted Cooking Light’s newest first but I do borrow it from the library when it’s available.

    I covet the Magic Bullet Blender thingie that Jerry bought for her – I see them at Costco now and then and as God is my witness, I will be the owner of it someday. I will.

    They do make sugar free marshmallows–from malitol. I do however make my own marshmallows because the blue dye in the regular ones make my kids go insane.

    I love Jessica’s cookbook! I haven’t tried these yet. But I have very picky nieces and they are my guinea pigs for new stuff like this!
