Saturday Stirrings: Almond Coconut Bark
September 8th, 2007 by FiddledeedeeLast night, I said to Fiddledaddy, “I wish I had an Oreo.” “Pffft, an Oreo?” “Okay, a column of Oreos.” Ordinarily, this is where Fiddledaddy would rush out to the closest grocery store and procure me a bag of Oreos. Because that’s the kind of guy he is. And he knows when I start speaking of Oreos, I’m on the precipice of my menses. But I’ve given strict instructions never to purchase Oreos ever again. No matter how much I beg or even threaten, Oreos must never cross my threshold. As they are evil. Amen.
Instead, he suggested, “Why don’t you make that Bark thingy.” Okay he didn’t use the word “thingy”, I actually don’t remember what he called it, but I knew what he was talking about. And it was a darned good idea. It quenches my chocolate cravings, without destroying what’s left of my tattered metabolism.
Almond Coconut Bark
Bar of Bakers semisweet Chocolate
Dash of Almond Extract
Handful of Sliced of Almonds
Handful of Shredded Coconut (Can Omit – but then it would be “Almond Bark” and is just as delicious)
Throw chocolate squares into a saucepan set on “low”. As chocolate is melting, stir and put a dash of almond extract into pan. When completely melted, add almonds and coconut and stir. Remove from heat.
Line a pie pan with wax paper and pour chocolate mixture in, spreading thinly. Stick pan into fridge or freezer for about 15 minutes. It hardens quickly. When you take it out of the fridge, remove wax paper (duh) and place chocolate into a plastic baggy to break into bite sized pieces.
I’ve also been known to dip a chocolate piece into the peanut butter jar. Shhhhh. But no double dipping, because that would be bad form.

Maybe it’s ‘better’ if you don’t do the whole dip-in-peanut butter thing. But then, doesn’t peanut butter count as a protein?
But since I am not an Oreo fan (I know, odd huh?) these sound wonderful. And if DeeDee says they are better for me than Oreos … works for me!

These are better because I am satisfied with just a small piece. Or two. Instead of say, an entire bag of Oreos. Which, yes, I have eaten in one sitting.
Also, y’all, you can substitute pistachios for the almonds and coconut. And use vanilla extract instead of almond extract.

This recipe sounds yummy!! My hubs would even like it! I was reading your 100 things list, and found it hilarious that you had a pekinese. We have one named Max too, and often call him Maxee Pad!!

I’m absolutely sure that your Almond Coconut Bark is delicious, but have you ever tried dipping the OREO in the peanut butter? Oh. My. Word.

My oldest son was recently overheard telling his little brother that you “really can double dip, but first you have to flip.” Makes perfect sense to me. Expecially if you have to share your peanut butter with two younger brothers!

Mmmmm! We used to make my dad almond bark for his birthday, but with white chocolate. Now I´m drooling. I´m at the time of month when chocolate appeals too. Luckily, my guy is also very good about running to the shop to grab a handful of chocolate bars!

Well, I am pretty sure that I could consume the whole batch if the situation were dire enough. But these sound divine.
And no one in my house likes coconut except ME. Shucks… guess I won’t have to share. Oh well, MORE FOR ME!!
